In New Zealand, wild Thyme (Thymus Vulgarus)and its honey is unique to Central Otago where the hardy bush thrives in the region’s extreme weather conditions. Thymus vulgarus is a stout and fibrous perennial noted for its dislike of moisture. The plant prefers sandy, dry soils and plenty of sun, and its seeds retain their germinating power for up to three years, thus weathering the harshest of droughts – therefore perfectly suited to central Otago’s challenging climate!
