Breakfast Banana Bran Loaf

1 cup plain flour
2 tsp mixed spice
1 ½ cups bran flakes or wheat bran
½ cup raisins
½ cup manuka honey
¼ cup rice bran oil
3 large ripe bananas, mashed
1 tsp vanilla extract
2 eggs
¾ cup plain yoghurt
1 tsp baking soda, (sifted)


  1. Preheat oven to 200 degrees Celsius, line a loaf tin with baking paper
  2. Sift flour and mixed spice into a medium bowl. Stir in a pinch of salt, bran flakes and raisins
  3. In a large mixing bowl whisk together honey, oil, banana, vanilla, eggs, yoghurt and baking soda until smooth
  4. Fold the flour mixture into the wet mixture with a large metal spoon until combined, being careful not to over mix
  5. Pour into prepared loaf tin and bake for approximately 25 minutes or until golden and cooked through.
  6. Delicious fresh or toasted for breakfast sprinkled with fresh berries, yoghurt and a drizzle of honey
