French toast crumpets

Ingredients 

2 eggs

50ml milk

1/2t cinnamon 

1/4t vanilla extract 

Pinch of nutmeg 

2T Butter

4 crumpets 

J Friend & Co. honey and fruit to serve 

Method 

  1. Whisk the eggs, milk, cinnamon, vanilla and nutmeg together in a bowl. 
  2. Dip each crumpet into the mixture, leaving for 1 minute each side to soak. 
  3. Melt the butter in a fry pan over a medium heat. Fry the crumpets until golden each side. 
  4. Serve with a generous amount of honey and some seasonal fruit.
