Honey Carrot Cake

  • 1 cup wholemeal flour
  • 1 cup white flour
  • 2 teaspoons baking soda
  • 1 ¾ cup raw sugar
  • 3 Tbsp Manuka Honey
  • 3 cup grated carrot
  • ¼ tsp salt
  • 2 tsp ground cinnamon
  • 1 cup rice bran oil or similar
  • 4 large eggs beaten

  • 100gm cream cheese
  • 2 cup sifted icing sugar
  • 1 tablespoons manuka honey
  • 40 gm butter softened
  • Squeezy lemon juice

  1. Sift and mix the dry ingredients
  2. Add oil and honey and stir well, stir in beaten eggs and then add carrot and mix
  3. Grease and line a 25cm round baking tin with baking paper
  4. Pour mixture into tin and bake at 180degrees for 1 hour or until cooked through. Leave to cool then ice. Drizzle with honey just before serving if desired.

For Icing:
Beat all ingredients together, adding more icing sugar, liquid as required until smooth and creamy.
