Sharyn's Baking Club

Honey & Coconut porridge (serves 1)

1c boiling water
1/3c oats
2T shredded coconut
1T honey
Pinch of salt 
Milk to serve
Top with poached fruit or caramelized banana
1. Mix all of the porridge ingredients in a small saucepan.
2. Heat the saucepan over a medium heat until boiling. Reduce the heat to low and cook for 10-12 minutes, stirring often, until thick and creamy. If the mixture keeps catching add a little water.
3. Serve immediately with milk and toppings of choice.
