Manuka Ginger Crunch


  • 150gm butter
  • 2 Tbsp Manuka Honey
  • ¾ cup soft brown sugar
  • ¾ cup dessicated coconut
  • 1 ½ cups rolled oats
  • ¾ cup plain flour
  • 1 ½ tsp baking powder
  • 2 tsp ground ginger
  • 100gm butter
  • 3 cups icing sugar
  • 3 tbsp manuka honey
  • 5 tsp ground ginger


  1. Preheat the oven to 180 degrees Celsius
  2. Line a 20 x 20 cm slice tin with baking paper
  3. In a large saucepan, over low heat, melt together butter, honey and brown sugar
  4. Remove from the heat
  5. Mix all dry ingredients together in a bowl, then add to the saucepan. Mix thoroughly
  6. Press into slice tin. 
  7. Bake in oven for 15 mins or until golden and cooked through
  8. Mark into squares while still warm.
  9. Meanwhile make the honey and ginger icing by combining all ingredients in a saucepan over a low heat. Stir until melted, then beat until smooth. 
  10. While the mixture is still hot, spread over the warm base. Set aside to cool. When completely cold, cut through the icing and separate the squares.
